Her assignments may be quite difficult most of the time but when they are, they're also usually a lot of fun, so you shouldn't worry about hitting word count. Simply learn some healthy writing habits and have fun with the projects/assignments and, more often than not, you'll hit the word count minimum

While I do appreciate that her assignments are not only fun to do, but are also not simply easy and boring, I do have some problems with her assignments. For a lot of students, they take a large amount of time to complete, and when you have her in her Ethics course in Secondary 4 and 5, you may not have much time to spare. The 2 credits gained from the course can also be made up by the gym class, so much of the motivation to complete these assignment and not drop the course is diminished. The assignments are still fun to do, and wouldn't recommend getting rid of them, but I definitely think that their difficulties should be decreased slightly.
