I was in her Challenge & Change class and tbh the course itself isn't really hard. The assignments were easy 90s but the tests required memorization, which makes sense because it's a social science course--anthro, soc, and psych are typically heavily quantity-based subjects. So if you wanna do well on tests, memorizing terms, theorists, theories etc. is really important. Overall the course isn't too hard.
