This class is almost entirely writing prompts and essays, and as far as I could tell, the quality of essays barely mattered, but correct grammar, fulfilling the requirements of the prompt, and turning it in on time did. Don't try to make a masterpiece, just get it done by the end of the week. I also didn't need to study for the tests, since as long as you read the book in question, they were easy, but that might vary between different people. Make sure that you keep an eye on the list of assignments on the whiteboard to make sure you don't miss one, and whenever you're done, instead of talking or messing around, ask her what the next assignment is so that you'll be ahead of other people. Once, without saying anything, she put an assignment on the list, and I was done early, so I asked her what I could do and she pointed them out to me. Most of the other people in the class didn't do that assignment and only found out weeks after it was due. I would also recommend (with your parents' help) attempting to move out of her class into another writing class because it worked for multiple students I knew, and they seemed less stressed afterwards when some other students were.
